VINTAGE REPORT
This wine looks intensely red, with purple and blackish hues, denoting great concentration.
It features intense aromas, mainly of red fruits, framed in spicy notes, with balanced and subtle touches of
liquorice, vanilla and coconut.
It has a creamy mouth, with gentle, rounded tannins, and a long, lingering finish, with adequate storage
potential.
Weather in the 2007/2008 season was very favorable for vegetation and vine health.
High temperatures occurred in the bud-break to harvest sub-period, reaching technological maturity with good
sugar / acidity balance in the pulp, a good concentration of polyphenols and varietal aromas in the skins.
The ripening of the pulp and skin was concurrent, leading to excellent balance in chemical composition.
This wine comprises four varietals grown in different valleys of San Juan Province. The Syrah represents 40% of
the blend, and is grown in Pie de Palo, Tullum Valley; the Tannat represents 20% of the blend, and is grown in
Zonda Valley, and the Malbec and Merlot, each representing 20% of the blend, are grown in Pedernal Valley.
The Syrah was harvested in the first half of March, the Tannat, in mid-March, and the Malbec and Merlot, in
the first week of April.
The grapes were hand-harvested during the morning. Berries reached the fermentation tank virtually
intact. Fermentation started with cold maceration for 96 hours at 8?C. Select yeasts were inoculated.
Fermentation occurred at controlled temperatures in the 20?C to 25?C range, for 15 days. Pumping over
was performed very gently, on a daily basis, until the end of fermentation. Maceration continued for five
additional days. After this stage, the wine was racked and natural malolactic fermentation took place.
The four varietals underwent separate winemaking processes and were aged separately for 18 months, in
first-use barrels, 50% TM French oak and 50% TM American oak.
The barrels were kept under controlled temperature (12?C) and humidity (80%) conditions.
The wine was bottle-aged for six months in the same temperature and humidity conditions.
Vineyards are located in the three major valleys of San Juan Province: Tulum, Zonda and Pedernal.
Silty-loam soils of alluvial origin.
Drip irrigation is used in Tulum and Zonda Valleys, with snowmelt from San Juan River. Vineyards grown in
Pedernal Valley are irrigated with springs from the foot of El Tontal mount.
The vineyard plantation frame for the Syrah variety has 2.5 m clearance between rows and 1.25 m between
plants, with a density of 3200 plants per hectare. For the Tannat, it is 3 m between rows and 1.33 m between
plants, rendering a density of 2506 plants per hectare. Both the Malbec and Merlot varieties are planted in a
frame of 2.3 m between rows and 1.25 m between plants, with a density of 3440 plants per hectare.
Rainfall during the whole period was 100 mm for Pedernal Valley, and 90 mm for Zonda and Tulum Valleys.
